BLUEBERRY COCONUT SMOOTHIE BOWL 

Need a little kick out of the January blues? I came up with the perfect smoothie bowl that has the sweetness of fruits, a serving of greens and that much needed protein to wake you up and keep you going. It took me ten minutes to make and probably about two to devour. Try it out and see for yourself! 


In order to make sure this bowl is completely vegan, I used Vega One Vanilla Protein+Greens powder but you can substitute for your own. The same goes for the milk, I like to use unsweetened almond or coconut milk in my smoothies bowls, (coconut would go fantastic with this recipe) but substitutions work beautifully as well. The vanilla adds a natural sweetness and so does the banana so you don't have to add any other sugar. If it's not sweet enough you can always drizzle honey on top for extra flavour! 



BLUEBERRY COCONUT SMOOTHIE BOWL 


INGREDIENTS 

1 cup frozen blueberries 
1 frozen ripe banana 
1/2 cup spinach 
1/2 cup unsweetened nut milk of your choice (I used almond) 
1 tbsp chia seeds 
1/2 tbsp coconut flakes 
1 scoop Vega One Vanilla Protein+Greens powder

INSTRUCTIONS

  1. Pour milk into blender and ice cubes as desired 
  2. Add frozen banana, blueberries and spinach
  3. Blend on low 
  4. Add chia seeds, coconut, and protein powder 
  5. Blend again until you get a smooth consistency, but not too run-ny 
  6. Decorate as you like. 
*toppings: desiccated coconut, chia seeds, fresh fruit, cashews, almonds, granola*
